Vegetable Shabu Nabe (Vegetarian Hot One Pot)

  • Lettuce 2 x heads
  • Watercress 180g(6.3oz)
  • Shiitake mushrooms about 12 pieces
  • Oyster Mushrooms 300g(2/3 pounds) or Maitake mushrooms, Hiratake mushrooms
  • Harusame (bean thread noodles) 60g(2.1oz)
  • Ponzu 360ml (1 1/2 cup)


1.Separate the lettuce leaves.
2.Slice Shitake mushrooms thinly, separate oyster mushrooms.
3.Rinse Harusame and soak in hot water about 5 minutes.
4.Fill a deep pan (Nabe pot) with 4 cups water and heat. Once it begins to boil, add lettuce leaves, watercress, harusame, shiitake mushrooms and oyster mushrooms. Bring the soup to the boil, and other ingredients are cooked until soft, dip them in Ponzu sauce and enjoy.
